Coffee comes from central Ethiopia, from the province of Sidamo, south of Lake Awasa. Ethiopia is the cradle of coffee. Escobar’s Sidamo coffee comes from smaller farms, which is a great achievement, as Ethiopia’s coffee exports are centralized and it is extremely difficult to get coffee from individual farms.

Coffee is picked by hand. The wet cleaning process follows. This removes the shell, and then the peeled coffee beans are dried in the sun, on "African beds" (raised wooden structures).
